Farmers Markos Drossos (left) and Nikolaos Darzetas shovel fava beans, also known as yellow split peas, in the village of Eborio on the Cycladic island of Santorini. This technique allows the beans to fall to the ground while the chaff blows away in the wind. Fava beans are traditionally harvested by hand and with the aid of horses on Santorini, which is famous for its local variety of the bean served in traditional dips, salads and other dishes.
